1 cup Desert Oasis whole grain teff
3 cups water
salt and black pepper
olive oil
2 eggs (hard boiled)
1 ripe avocado
fresh cilantro


  1. Add teff to boiling water. Cover, reduce heat to low and simmer 15 – 20 minutes or until water is absorbed. Stir often. Dash with salt and black pepper.
  2. Serve half of the teff with one egg, ½ the avocado and a few sprigs of fresh cilantro. Drizzle with olive oil and dash with more black pepper.
  3. Use remaining ingredients to pack a lunch for tomorrow! Makes 2 servings.
